Lemon Buttercream Cupcakes


  • Box of yellow cake mix
  • 3 eggs
  • 1/3 cup of oil (your pick)
  • 3/4 cup water
  • 1/4 cup lemon juice
  • Buttercream Frosting
    • For a recipe, I like this one.
    • You can also use store-bought and that is just fine.

Follow the cake directions on the box, except replace some of the water with lemon juice. Bake according to directions (until a toothpick or fork comes out clean), and then while still hot, sprinkle lemon juice onto the cakes.

Let cool, then frost (less is always more).

This isn’t all that unique, just that sprinkling the lemon made the cake the most moist thing I have ever eaten. They were a hit, even at my over-healthy office.
