Feta/Egg/Cheese/Tomato Breakfast Wrap

Ingredients

  • olive oil
  • 1 large egg and 1 large egg white
  • 1/4 tomato
  • 1 TBS green onions
  • handful of spinach
  • 1 oz feta cheese
  • 1 tortilla

Directions

Scramble the egg in olive oil. Turn to medium heat and add the tomato and onion. Cover with spinach and toss until it’s wilted.

Set into a ready tortilla, sprinkle with feta cheese. Put back in the pan to seal the tortilla and heat through.

Very juicy, the tomato will come out a lot, so make sure you eat over a plate, for real.
