- 2 ripe bananas, mashed
- 1 1/2 c. sugar
- 1/2 c. vegetable or canola oil
- 2 eggs
- 1 tsp vanilla
- 1/4 c. and 1 TBS buttermilk
- 1 tsp baking soda
- 1/2 tsp salt
- 1 3/4 c. flour
- 1 c. walnuts, chopped
Preheat your oven to 325 degrees
In a medium bowl, mix the bananas, sugar, oil, eggs and vanilla. Then stir in the buttermilk.
In a small bowl, stir the soda, salt and flour together. Add to the banana mixture. Then stir in the nuts gently.
Pour into a greased bread pan and bake for 1 hour and 20 minutes.
Allow to cool before topping over unto a cooling rack. Store in a plastic baggy and keep sealed so that it doesn’t lose its moisture.
